Hi Sean

I never really let it get dry. I just let it get damp then wet it again. I was pretty sure that the bacterial process required water. Mostly I use the heat lamp to keep it warm and working in our unheated basement which is about 60f.

I turn it often throughout the day to keep it well oxygenated.
